Bircher Muesli

A few of the hotels we stayed at during our honeymoon in Thailand offered Bircher Muesli as part of their breakfast buffets. I became a little infatuated with this delicious but healthy oatmeal alternative, made with overnight oats, orange juice, yogurt, milk and other delicious toppings,  and would eat a cup every morning. I researched it and found recipes I liked while I was still on my honeymoon and couldn’t wait to come home and make a batch of my own.

Ingredients (as seen above)

  • 1 ½ cup oats (old fashioned, not quick cooking)
  • 7-8 tbsp orange juice
  • ½ cup of plain greek yogurt
  • ¾ cup milk (non fat or regular)
  • ¼ cup coconut milk ( you can just substitute with regular milk if you don’t have coconut milk)
  • ¼ cup of water
  • 3-4 tbsp raisens
  • 4-5 tbsp walnuts, sliced almonds or other nuts
  • ½ cup shredded coconut
  • ¼ tsp cinnamon
  • honey as needed to sweeten

Instructions

  • Add all of the ingredients in a bowl, mix well. Cover and refrigerate overnight.
  • Add honey as needed when serving along with additional toppings  like fresh fruit.
  • If the mixture is too thick, add more milk or water until the desired consistency is achieved.

The mixture becomes incredibly creamy overnight, the oats soften, the raisins plump up, the coconut almost melts away in the milk and yogurt and the orange juice adds a dash of extra sweetness. I really like this with nuts as they add some texture and crunch. The best part, muesli is technically a breakfast food but it tastes so good you can eat it anytime of the day and can easily sub it in for dessert.

Chicken Tacos

There are few things that I love more than tacos. There’s more than a few tacos places in NYC that make delicious ones but every once in a while I like to make a few at home. This weekend I used some of my slow cooked chicken to make … what else… chicken tacos. The chicken itself was very flavorful so I didn’t need to add much to make these tacos delicious. I warmed up a few corn tortillas, drained the chicken a bit as it was quite juicy, then added fresh made guacamole, a squeeze of lime juice and a few slices of radishes. They turned out very good. I repeated the same recipe for my parents and my brother a few days later and it was a huge hit with them as well. Don’t forget to have a nice cold beer with these or maybe one of these vodka lemonade concoctions
